The Chez Burton Story

About Us

Previously La Concha, a quaint little tapas bar at Letchworth station. This was the inspiration for us to buy a little place of our own and was the original place that we had our hearts set on.  We would get the train out of London and come straight out of the station and slip into La Concha for a glass or three and some great food. It was there, over a wonderful bottle of Primativo (a Papale Oro from Italy which we still serve today) that we first said out loud, “wouldn’t it be great to have a bar/restaurant of our own!”.

We had our heart set on this place, but sadly it was not meant to be. We tried to ignore the vision for a while, but it was an urge that was too strong. We looked locally and found our Baldock home and created Chez Burton, a small plates, fine dining restaurant without the formality; and the rest was history…..or was it?

The Letchworth building had always had a special place in our hearts. It was the genesis of our journey. The original! The OG! We watched our old favourite little tapas bar close after Covid, and the building just lie empty and sad; and we knew, despite having our amazing Baldock restaurant, plus two full time jobs, we had to take the plunge again. We wanted to be respectful to the heritage of the building, it’s previous customers and the town itself, and breathe life back into that special place.

After a year of contractual negotiations, planning permission and listed building consent, design, refurb and fit out, we now open the doors to the newest member of the Chez Burton family, The Waiting Room.

Where it Began

Think back to pre-Covid, life seemed very different then for most of us.

We were newly married and enjoying life, children all grown up, great careers and time to spare and enjoy.

We were like many locals from Letchworth who would stop at our local tapas bar on the way home after getting off a train.   This is where we begin our story….
